CARE AND SHARPENING OF YOUR KNIFE
We craft each blade from high quality American made D2 and S35VN tool steel. These steels have a long history as a superior steel for knives and cutting tools. D2 is a high carbon steel which also has a high Chromium content giving it the unique property of having the cutting ability of carbon steel, toughness, and when properly polished, resists rusting like stainless steel. We hand polish each blade to a fine finish which makes it nearly stainless. When properly hardened and tempered it is a very tough steel which holds an edge extremely well. This ability to hold an edge also makes it a challenge to sharpen. We recommend using a fine diamond sharpening stone or fine ceramic sharpening rod, or if the edge is severely blunted, a courser stone may have to be used, followed by a finer stone. We recommend polishing the edge to at least 1000 grit for the best cutting edge. All of our knives are sharpened at an exact 21 degree edge. All of our knives will be sharpened free of charge if returned to our shop. Shipping not included for sharpening service.
